What do you mean by GPS has correct time? Traccar expects UTC time zone by default. Is that what your device is reporting?

If the device was set the time of my country (GMT-5), we do that with the rest of the equipment of other protocols, but with the gt06 model the device takes a different time I was informed in a forum that you have to add an instruction to the protocol that is this so that those devices do not take the utc time if not the server, is it a good idea?

We always recommend to set UTC time on devices, but what you did should also work, assuming everything is set correctly.
By the way, why are you overriding time?
