Why dont you first copy the directory of 6.1 to another directory and create a new empty database where you import a database backup from 6.1
This way you can test it without losing anything when something goes wrong.
maube will be ok, but settings and changes of protocols im afraid to lose.
You shouldn't lose any settings. But if you have some code customization, obviously you have to reapply it again to the new version.
So which is the precude ro update?

I recommend you to learn how to use github for code updates. You can easily follow updates by creating your own private fork.
Settings, users, and all data are in the database so no information is lost.
I recommend that you perform your test operations on a virtual server (vbox) before performing the operations.

to update from 6.1 to 6.5 can i do it without loosing settings/users/devices and everything ?
also i have changes to some protocol , i will lose the protocol changes with the update?
